What I baked today… Cupcakes

Occasionally, I like to spend an afternoon cupcaking to my hearts content.


I started with nothing in particular in mind and ended up with this lovely lot!


Aren’t they pretty?

They might look fancy on the outside, but inside they are a little bit … vanilla.

No literally, they are my Ultimate Vanilla Cupcakes with Vanilla Buttercream.

For the Cupcakes:

175g Self Raising Flour

125g Butter

2 Eggs

175g Granulated Sugar

3 tsp Vanilla Extract

60g Vanilla Yogurt

3 tbsp Milk

1. Melt the butter gently in a microwave and add the sugar. Mix until fluffy.

2. Add vanilla and eggs and beat for 1 minute.

3. Add 1/3 flour then 1/3 of yogurt, vanilla and milk. Repeat twice more until all the flour is incorporated.

4. Bake at 180oC for 15-20 mins

For the frosting:

220g Butter

500g Icing Sugar

2 tsp Vanilla Extract

1. Beat butter until fluffy, then add the icing sugar (cover with a tea towel so it doesn’t go everywhere!) and add vanilla.


To give the cupcakes the lovely smooth domed effect, simply wait until they are cool and top with buttercream and a circle of fondant.

I forgot to photograph this part so here’s an easy tutorial from mycupcakeaddiction.

Then using various colours of fondant (I use Tesco, and it’s 3 for 2 at the mo!) you can go wild!


You can mix your own colours using food colouring but it really is much easier to buy pre-mixed.

Don’t tell anyone, but even the boy stuck his beak in and made this little chick.


Ahem. I mean he DEFINITELY didn’t. He drank beer and watched football. Grr.
